Ingredients:

- 4 large eggs

- 4 cups bone broth

- 1 cup mixed vegetables (such as bell peppers, carrots, cucumbers, and radishes), thinly sliced

- 1 cup fresh herbs (such as cilantro, mint, and basil), chopped

- 1 small red onion, thinly sliced

- 2 tablespoons fish sauce

- 2 tablespoons lime juice

- 1 tablespoon soy sauce

- 1 tablespoon honey

- 1 tablespoon vegetable oil

- Salt and pepper to taste

- Crushed peanuts (optional, for garnish)


Instructions:

1. Start by boiling the eggs: Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium heat and let the eggs cook for about 8 minutes. Remove the eggs from heat, drain the hot water, and transfer the eggs to a bowl of ice water to cool. Once cooled, peel the eggs and set them aside.

2. In a separate pot, heat the bone broth over medium heat until it simmers. Keep it warm on low heat while you prepare the other ingredients.

3. In a small bowl, whisk together the fish sauce, lime juice, soy sauce, honey, and vegetable oil to make the dressing. Adjust the flavors to your liking by adding more lime juice or honey if desired.

4. In a large mixing bowl, combine the mixed vegetables, fresh herbs, and sliced red onion. Pour the dressing over the salad ingredients and toss gently to coat everything evenly.

5. Heat a non-stick skillet over medium-high heat. Add a drizzle of vegetable oil to the skillet and carefully place the peeled boiled eggs in the hot oil. Cook the eggs for a few minutes on each side until they develop a crispy outer layer. Remove the eggs from the skillet and let them cool slightly before slicing them into halves or quarters.

6. To serve, divide the bone broth among serving bowls. Ladle the warm bone broth into each bowl and top it with the dressed vegetable salad. Place the crispy fried egg slices on top of the salad. Garnish with crushed peanuts if desired.

7. Serve the Rainbow Thai Crispy Fried Egg Salad in Bone Broth immediately while it's still warm. Enjoy!
